Method:
Wash, peel and place the potatoes into a large saucepan of lightly salted water and bring to the boil. Reduce the heat and simmer for 10-12 minutes until the potatoes are tender. Using a colander drain all the water from the potatoes and allow them to steam dry.
Meanwhile add the milk and butter to the pan, return it to the heat and allow the heat to combine both ingredients. Using a potato ricer or masher, combine with the butter and milk, forming a smooth and delicious mash. Finally, season with salt and freshly ground black pepper.
